What goes in

Flour, water, salt and time

We keep our list short so we can bake every tray well.

  • Flour from one millWe buy our flour from a single mill and weigh every batch in the afternoon.
  • Overnight cool-room riseEvery loaf rests and rises slowly overnight in the cool room—this is where the flavour comes from.
  • No improvers or preservativesBecause we use no improvers and no preservatives, our bread is best in the first two or three days.
  • One-room kitchen allergen noticeEverything is made in one room with wheat, rye, seeds, milk and eggs. Please ask us before you order.
  • Party & gathering ordersOrdering more than ten loaves for a party? Give us two days’ notice.
  • Saturday village deliveryWe deliver in the village on Saturdays for orders over £15.

If the loaf is not right, it does not go on the shelf. It goes to the ducks on the green.
